This soup is high
in the anti-oxidant beta carotene and Vitamin A. It is a warming soup and
with the garlic and onions which are terrific in its anti-bacterial and
anti-viral qualities you will find this soup as delicious as it is
nutritious. Try to obtain organically grown ingredients whenever
possible.
Ingredients:
-
2 lbs peeled,
sliced carrots
-
10 cloves of
garlic peeled
-
2 chopped
onions
-
2 quarts
chicken or vegetable broth
-
3 slices of
peeled ginger
-
2 Bay leaves
-
2 sprigs fresh
Rosemary
-
Salt (use high
mineral or sea salt)
Steps:
-
Bring broth to
boil, add sliced carrots, garlic, onions, herbs and ginger.

Boil until
vegetables are very tender 30-40 minutes
-
Remove
rosemary, bay leaves and ginger from soup

Blend contents
in blender or use hand blender in pot to puree soup until smooth

Add salt to
